Garam masala
1 tablespoon coriander seed
2 teaspoons cumin seed
1 teaspoon whole black peppercorn
½ teaspoon whole clove
½ teaspoon green cardamom seeds
2 bay leaves
2 dried red chiles, stemmed
1 3-inch cinnamon stick
¼ ground nutmeg
  1. Toast all the ingredients except for the nutmeg. Grind to a fine powder.
