Creole seasoning
If you have different types of paprika, feel free to mix them together to make the 1½ tablespoons. I like to use Spanish smoked paprika, Hungarian sweet paprika, and Hungarian half-sharp paprika in equal measures.

1½ tablespoons paprika
¾ tablespoon ground black pepper
½ tablespoon kosher salt
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion powder
1 teaspoon cayenne pepper
Emeril Lagasse ("Essence")
2½ tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
  1. Combine all ingredients and store in an airtight container.
