Rubye's Strawberry Cake
Ingredients
3 eggs, room temperature
1 cup oil
½ cup water
1 package white cake mix
1 3oz package strawberry Jell-O
3 tablespoons flour
½ cup fresh, crushed strawberries
Directions
- Preheat the oven to 350°F.
- Beat eggs. Add oil and water, then beat again. Add dry cake mix, Jell-O, flour, and berries. Beat 1 minute.
- Pour into greased and floured cake pan(s). Bake for 30 minutes or until cake tests done.
Frosting
1 box (1 lb) powdered sugar
¼ cup butter
½ fresh, crushed straberries
Instead of fresh berries, thaw 1 package of frozen strawberries. Using a serrated spoon, pick out the berries for the cake part and use the syrup in the frosting.
Original recipe said to use less sugar in the frosting for an oblong cake.
