Date bars
Ingredients
1 cup butter
3 eggs
2 teaspoon water
3 cups flour
2 tablespoons sugar
2 cups sugar
1 teaspoon baking soda
8 oz dates, chopped (don't buy the pre-chopped ones, they suck)
1 teaspoon cinnamon
¼ teaspoon ground cloves
1 cup walnuts, chopped
Dash salt
Directions
Make and chill the dough
- Cream butter.
- Add 2 cups sugar and beat until light and fluffy.
- Add eggs one at a time beating well after each.
- Combine soda and water, blend into cream.
- Add dates and mix.
- Sift flour, spices, salt together and add slowly.
- Mix in nuts.
- Chill several hours.
Bake the dough
- Pre-heat oven to 350°F.
- On floured board shape dough into rolls about 10 inches long and 3/4 inch diameter. Place on buttered pans.
- With fingers, flatten rolls to 1/4 inch thick.
- Sprinkle with sugar (I use the fancy Sugar in the Raw if I have it, or just use regular sugar).
- Bake 15-18 minutes.
- While still hot, make diagonal cuts across flattened rolls to make bars.
Makes 5-6 dozen.
